The client wanted a dynamic backdrop for this construction industry awards ceremony and asked Bubble to design the concept and deliver the whole event. Following welcome drinks and canapés, lunch began with Vacuum packed salad paysanne, dehydrated bacon strips, and continued with Beef fillet, red sauce, a ‘Martian’ chip, carrot Wasabi, black garlic ketchup in a food tube (or Kudzu gnocchi, kale, morels, parmesan cream, crispy sage vegetarian option). A theatrical dessert followed – Opulent jewelled mango yoghurt and pistachio kulfi bowl hidden under a white sugar sheet, topped with no2 mint granita which was crushed at the table by chefs.
